This super easy and tasty vegan chicken salad is our favorite. I think that the combination of dried cranberries and walnuts makes it special. Your non-vegan friends will never know it isn’t made with actual chickens because it is just that tasty!
There are several vegan chicken alternatives on the market but the one from Sweet Earth is hand’s down our family favorite. Recently, I happened to use some of up a different brand that I had on hand for a veggie stir fry. My husband asked if it was made with the Sweet Earth Mindful Chik’n Strips that we like. I said, no it wasn’t. He said, I can tell. So that’s it, from now on we only buy the Sweet Earth Mindful Chik’n!
The recipe for vegan chicken salad is super quick and easy. Just chop up the ingredients, mix, and serve. Some people might suggest using a food processor for prepping this recipe, however, a knife and a chopping board are all you need.
For serving ideas, try it in a wrap, on toast, or simply on a bed of lettuce to make a low calorie lunch.

World’s Best Vegan Chicken Salad
Ingredients
- 1/4 cup walnuts finely chopped
- 3 tbsp dried cranberries finely chopped
- 1/2 cup celery chopped
- 4 tbsp scallions chopped
- 1/2 cup vegan mayo
- 2 tbsp spicy mustard
- 8 oz Sweet Earth Mindful Chic'n Strips chopped to small pieces
Instructions
- Combine all of the ingredients in a bowl.
- Serve over a bed of lettuce, or in a sandwich.
